ABOUT Traditional Nagpuri Coriander Rolls (Pudachya Vadya) RECIPE

Delicious traditional recipe from Vidarbha region of Maharashtra. My mom is from Nagpur. She makes this delicious snack. This is her recipe, I am posting on behalf of her.

Ingredients Serving: 10

  1. For Filling -
  2. Chopped Onions - 3
  3. Oil - 2 Tbsp
  4. Grated dry coconut - 1 cup
  5. Khas Khas - 2 tsp
  6. Sugar - 2 tsp
  7. Nagpuri Kaala Masala (Black Masala) - 4 tsp
  8. Raisins - 100 g
  9. Coriander - 1 kg
  10. Red chilli powder - 3 tsp
  11. Turmeric - 1 tsp
  12. Hing - 1 tsp
  13. Salt - 1 tsp
  14. For Cover -
  15. Gram Flour - 4 cups
  16. Oil - 1/4 cup
  17. Turmeric - 1 tsp
  18. Hing - 1/2 tsp
  19. Red chilli powder - 1 tsp
  20. Salt - 1 tsp
  21. Oil for frying

Instructions

  1. For Filling -
  2. Saute the onions in oil till they are reddish brown in colour. Add khaskhas to it.
  3. Add the black masala, red chilli powder, turmeric, hing, sugar, salt, dry coconut and raisins. Saute them thoroughly. Add coriander and saute it till it is cooked.
  4. Turn off the heat and cool it.
  5. For cover -
  6. Heat the oil (Mohan) and put the hot oil in the gram flour.
  7. Add salt, red chili powder, hing and turmeric. Knead it into a tight dough.
  8. Cover it and keep it aside for half an hour.
  9. Now roll the dough into small circles (size of poori). Add the filling to it. Fold the dough into rectangular shape. Use water to stick the dough into rectangular shape.
  10. Heat the oil for frying. Deep fry the rolls till they are deep red in colour.
  11. Serve hot! Enjoy the crunchy snack!
