Ingredients to make Fattoush

  • Ice Berg Lettuce - 200 gm
  • Romaine Lettuce - 200 gm
  • LolloRosso Lettuce - 200gm
  • Onion - 1 medium sized
  • Tomato - 100 gm
  • Cucumber - 100 gm
  • Red Bell pepper - 20 gm
  • Yellow Bell pepper - 20 gm
  • Honey - 15 gm
  • Vinegar – 10 ml
  • Extra Virgin Olive Oil – 60 gm
  • Salt – to taste
  • Mint Leaves - 10 gm
  • Hummus: 100 gm
  • Carrot – 50 gm
  • Parsley – 20 gm

How to make Fattoush

  1. Hand tear the lettuce into small bite size portions. Cut the onion, tomato, cucumber red and yellow bell pepper in to cubes (2cm by 2cm) and grate the carrot using a cheese grater.
  2. In a bowl, mix honey, vinegar, salt and mint then whisk in the oil drop by drop till a thick dressing is made.
  3. In a large bowl put in all the lettuce and cut the vegetables, add this to the dressing. Mix till all the vegetables are coated nicely and place on the dish to serve.
  4. Garnish with humus and chopped parsley.
