Tomato Basil Bruschetta

Ingredients to make Tomato Basil Bruschetta

  • 1 baguette or any other bread of your choice
  • 2 tblsp + 2 tblsp of good quality olive oil
  • 1 tsp balsamic vinegar
  • 4 tomatoes
  • 1 handful basil
  • salt to taste
  • pepper to taste
  • a pinch of sugar
  • 1 clove of garlic

How to make Tomato Basil Bruschetta

  1. 1. First chop your tomatoes into bite sized pieces. Add salt, sugar, pepper, balsamic vinegar and 2 tblsp olive oil it.
  2. 2. Tear the basil with your hands. Add to the tomato mix. Keep aside.
  3. 3. Slice your bread into thick chunks, brush with olive oil and grill over a hot pan. Once the bread has charred a bit, take it off the heat.
  4. 4. Rub each slice with the garlic clove. Top with the bruschetta mix and extra basil and serve immedietely.
My Tip: You can add a bit of pesto to your bruschetta for a more pronounced basil flavour
