Dolma

Ingredients to make Dolma

  • 2 onions chopped
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 cup uncooked long grain rice
  • 2 green onions chopped
  • 2 tbsp dill leaves chopped
  • 2 tbsp parsley leaves chopped
  • 1 tbsp mint leaves chopped
  • 1 tsp cinnamon powder
  • 1 tsp all spice(nutmeg clove)
  • 2 tbsp raisins
  • Salt to taste
  • 1/2 tsp pepper powder
  • 2/3 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp sugar
  • water as needed
  • 500gms jar of pickled vine leaves

How to make Dolma

  1. Heat oil in pan, saute onions for 5 mins. Add garlic, saute for another 2-3 mins.
  2. Add rice, green oinions, dill leaves, coriander leaves, cinnamon, all spice, raisins to onion mixture. Season with salt and pepper.
  3. Soak vine leaves in warm water for 5 mins.
  4. Remove the soaked leaves and rinse in cold water. Separate the leaves.
  5. Place 1 heap tbsp of rice mixture in the center of each leaf, tightly roll the leaf up making a neat roll.
  6. Place a pot on heat and put the rolls in the pot.
  7. Mix 2/3 cup oil, lemon juice, water and sugar and poyr the mixture over the rolls.
  8. Simmer for 40-50 mins. If water mixture has evaporated entirely, add more water.
  9. Cool for some time, remove roll from pots.
  10. Serve the rolls on a platter.
