Ingredients Serving: 2

  1. Basmati rice- 1 cup
  2. oil - 4 tablespoons
  3. chopped garlic- 1 tablespoon
  4. red chili - 10
  5. vinegar- 1 teaspoon
  6. spring onions- 4
  7. chopped beans - 1/4 cup
  8. chopped carrot- 1/4 cup
  9. ground pepper- 1 teaspoon
  10. salt as per taste
  11. lite soy sauce- 1 teaspoon
  12. water- 2 cups

Instructions

  1. First we have to make Schezwan sauce, so soak the red chili in hot water for an hour
  2. Grind the red chili to a fine paste
  3. Heat a pan and 2 tablespoons of oil
  4. Add the chopped garlic and fry it for a minute
  5. Now add the red chili paste to it and cook until the oil oozes out
  6. Add some salt
  7. Add vinegar and little water if required to get the sauce consistency
  8. After 10 minutes switch the flame, Schezwan sauce is ready
  9. Soak the basmati rice for 30 minutes, add water in 1:2 ratio and then cook it
  10. Once the rice is cooked, allow it to cool
  11. Now take a wide pan and add the remaining 2 tablespoons of oil
  12. Add the remaining chopped garlic and chopped spring onions (white part)
  13. Add the chopped veggies and cook it for 3-4 minutes on high flame
  14. Now add the rice and toss it
  15. Add the prepared Schezwan sauce, soy sauce, pepper powder and salt
  16. Toss it well and add some spring onions( green part) finally
  17. Schezwan veg fried rice is ready
