Ingredients to make Vada Sambar

  • 1 cup urad dal
  • 2 green chilli, finely chopped
  • 1 inch ginger, finely chopped
  • few curry leaves, finely chopped
  • 2 tbsp coriander, finely chopped
  • 1 tbsp dry coconut / kopra, chopped
  • pinch of hing / asafoetida
  • 2 tbsp rice flour
  • ½ tsp salt
  • oil for deep frying

How to make Vada Sambar

  1. SOAK 1 CUP URAD DAL IN ENOUGH WATER FOR 3 HOURS
  2. DRAIN, GRIND INTO A SMOOTH, FLUFFY PASTE ADDING UPTO 5-6 TBSP WATER
  3. TRANSFER BATTER TO A MIXING BOWL, WHIP IT
  4. ADD ALL THE INGREDIENTS
  5. ADD 2 TBSP FRESH CORIANDER, MIX
  6. GREASE PALMS, DROP SMALL BALLS OF BATTER IN HOT OIL
  7. FRY ON MEDIUM HEAT UNTIL GOLDEN BROWN & CRISP
  8. DROP THE FRIED VADAS INTO WARM WATER, ADD 1/4 TSP SALT, SOAK FOR 10 MINS
  9. SQUEEZE OUT THE WATER FROM THE VADAS
  10. POUR SAMBAR OVER THEM
  11. FINALLY, SPRINKLE FEW CHOPPED ONIONS AND CORIANDER LEAVES SERVE SAMBAR VADA
