ABOUT Aachari veg pulao ( one pot dish) RECIPE

It is a combination of veggies, rice and pickle masala. It gives you a special and extraordinary taste. You can eat it in lunch or dinner and also carry it in your tiffin. I always serve it with raita that is very comforting for me.

Ingredients Serving: 4

  1. Rice 2 cup (soaked)
  2. Pickle masala 3 tablespoon ( leftover from any pickle)
  3. Vegetables:
  4. Cauliflower 1 cup chopped
  5. Carrot 1 cup chopped
  6. Potato 1/2 cup chopped
  7. Green peas 1 cup
  8. Brocoli 1/2 cup chopped
  9. Onion 1 chopped
  10. Ginger 1 tablespoon chopped
  11. Garlic 2 tablespoon chopped
  12. Tomato 1 chopped
  13. Green chillies 4 chopped or to taste
  14. Cumin seeds 1 teaspoon
  15. Green cardamom 2
  16. Black caradamom 1
  17. Cloves 4
  18. Cinnamon sticks 1
  19. Salt 4 teaspoon or to taste
  20. Ghee 2 tablespoon
  21. Oil 2 tablespoon
  22. Water 4 cups

Instructions

  1. Put oil in a wok and heat it add cumin seeds and all dry masalas. Roast it for 2 mintues.
  2. Add garlic, ginger and onion. Stir constantly till onion becomes translucent. Add tomato and stir constantly. Till masala leaves oil.
  3. Add potatoes and fry it for 5 mintues. After this add all veggies and let it simmer for 5 mintues. Add salt and green chillies .
  4. Add soaked rice and mix carefully. Roast it for 5 mintues. Add water and ghee to it.
  5. Cook it with covered lid till rice cooked.
  6. Add coriander leaves and serve with raita and chutney.
