Aachari veg pulao ( one pot dish)

Ingredients to make Aachari veg pulao ( one pot dish)

  • rice 2 cup (soaked)
  • Pickle masala 3 tablespoon ( leftover from any pickle)
  • Vegetables:
  • cauliflower 1 cup chopped
  • carrot 1 cup chopped
  • potato 1/2 cup chopped
  • Green peas 1 cup
  • Brocoli 1/2 cup chopped
  • onion 1 chopped
  • ginger 1 tablespoon chopped
  • garlic 2 tablespoon chopped
  • tomato 1 chopped
  • green chillies 4 chopped or to taste
  • cumin seeds 1 teaspoon
  • Green cardamom 2
  • Black caradamom 1
  • cloves 4
  • cinnamon sticks 1
  • salt 4 teaspoon or to taste
  • ghee 2 tablespoon
  • oil 2 tablespoon
  • water 4 cups

How to make Aachari veg pulao ( one pot dish)

  1. Put oil in a wok and heat it add cumin seeds and all dry masalas. Roast it for 2 mintues.
  2. Add garlic, ginger and onion. Stir constantly till onion becomes translucent. Add tomato and stir constantly. Till masala leaves oil.
  3. Add potatoes and fry it for 5 mintues. After this add all veggies and let it simmer for 5 mintues. Add salt and green chillies .
  4. Add soaked rice and mix carefully. Roast it for 5 mintues. Add water and ghee to it.
  5. Cook it with covered lid till rice cooked.
  6. Add coriander leaves and serve with raita and chutney.

My Tip:

Check constantly when lid is closed.
