Dahi vada

Ingredients to make Dahi vada

  • 1 cup urad dal (soaked overnight)
  • Salt to taste
  • a pinch of Hing
  • Mustard oil /any cooking oil as required for frying
  • Ginger 1
  • Green chillies 2-3 finely chopped
  • Cashewnuts 12-15 chopped
  • Raisins 10-12
  • Curd 3 cups
  • Roasted Cumin powder for garnishing

How to make Dahi vada

  1. Drain and grind the urad dal into a fine and fluffy batter. Add salt, hing, ginger, green chillies, cashew nuts and raisins, then whisk the mixture using your palms.
  2. Heat sufficient oil in a kadai to moderate heat. Take about two tablespoons of the batter on your wet palm and lower into the hot oil. Deep fry the vada till its golden brown. Drain and soak in warm water. Beat the curd with a whisk to make it smooth, then add in salt and mix it well.
  3. Squeeze the vadas to remove excess water and add it into the yogurt. Let them soak for at least fifteen to twenty minutes before serving.
  4. Garnish with roasted cumin powder. Serve cold.
My Tip: Add a little water while grinding the mixture and whisk it with your palms.

Yes so many time with little variation. I add1/4 moong dal along with urad dal after grinding keep for rest atleast 2 hrs
