ABOUT Kothambir badi or (dhaniya k muthiya) RECIPE

A healthy and comfort recipe for everyone, made with gram flour sooji and wheat flour and lots of fresh green coriander leaves which gives it a unique fresh taste. A famous snack in Maharashtra and my house too. It is steamed and then after cutting into bite-size pieces, they are tempered in little oil and lots of white sesame seeds to it a nutty flavor. And just have it your favorite chutneys and dips or you can pair it with your evening tea.

Ingredients Serving: 3

  1. Two cups besan
  2. One cup sooji
  3. One cup wheat flour
  4. Two cups chopped fresh coriander leaves
  5. One tbsp Red chilli powder
  6. Salt according to taste
  7. Garam masala
  8. Half tbsp ginger paste
  9. 2-3 chopped green chillies
  10. Two tbsp oil
  11. One tbsp sesame seeds

Instructions

  1. Dry roast sooji besan and wheat flour for few minutes
  2. Now mix it in a bowl and add all the ingredients except oil and sesame seeds
  3. Add tbsp oil and knead into dough. Divide into 2 or 3 parts and shape it into logs
  4. Steam them till 15-20 minutes in a steamer.
  5. Now cut into bite size pieces. Heat oil in kadai and add sesame seeds till crackling
  6. Add the chopped wadies into it and mix gently
  7. Serve hot with your favourite chutney and tea
