Mint Rice

Ingredients to make Mint Rice

  • 2 cup soaked rice
  • 1 cup mint leaves
  • 1/2 cup corriender leaves
  • 4 green chillies
  • 6 garlic cloves
  • 1 Inch of ginger
  • 1 tbsp coconut grated
  • 2 tbsp desi ghee
  • 1 tsp cumin seeds
  • 2 bay leaves
  • 2 stick cinnamon
  • 4 to 5 cloves
  • 2 cardamom
  • 8 to 10 cashew nuts
  • 1 onino julien
  • 2 tomato
  • 2 potato cut in chunks
  • 1 cup mix Vegetables (green peas, carrot,beans)
  • 1/2 tsp termuric powder
  • salt to taste

How to make Mint Rice

  1. Take mint, corriender leaves in a mixer jar add garlic,ginger,green chiili and grated coconut,make paste of it and keep aside it
  2. Now ghee in pressure cooker,add cumin,bay leaves, cinnamon stick, cardamom,cloves and cashew nuts one by one and roast,now add julien onion and wait to colour change add tomato and turmeric powder stir it till tomato half cook.
  3. Now add mix Vegetables and Potato chunks and stir it for a minute,add corriender and mint paste in and again stir for a minute in medium flame.
  4. Now add soaked rice and stir for a minute and add salt to taste and mix well
  5. Now add sufficient water and mix and close the cooker lid for 2 o 3 whistle or till rice completely cook.
  6. Now Mint rice is ready to serve, serve hot with fresh mint leaves.
