Ingredients Serving: 2

  1. FOR STRAWBERRY JAM
  2. 1.5 cups chopped strawberries
  3. 1/4 cup sugar
  4. SOUFFLE
  5. 2 eggs separated
  6. 1 tbsp apf
  7. 1/2 cup milk
  8. 1 tbsp butter
  9. RAMEKINS OR BAKONG TINS
  10. 1 tbsp butter for lining the baking tins
  11. Castor sugar for sprinkling

Instructions

  1. HEAT 1.5 CUPS CHOPPED, FRESH STRAWBERRIES, ADD 1/4 CUP SUGAR
  2. LET IT ALL BUBBLE UP, TAKE OFF HEAT
  3. GRIND THE COOLED STRAWBERRY PUREE TILL SMOOTH
  4. HEAT 1 TBSP BUTTER, ADD 1 TBSP FLOUR, SAUTE
  5. ADD 1/2 CUP MILK
  6. STIR BRISKLY TILL THICK, TAKE OFF HEAT
  7. SEPERATE 2 EGG YOLKS
  8. ADD 1 YOLK INTO THE READY WHITE SAUCE, WHISK
  9. WHISK TILL WHITE, ADD THE 2ND YOLK, REPEAT
  10. WHISK THE EGG WHITES
  11. WHEN EGG WHITES TURN WHITE, ADD 1TBSP SUGAR, WHISK TILL STIFF PEAKS ARE FORMED
  12. ADD 1 TBSP EGG WHITES INTO THE YOLK MIX, ADD THE STRAWBERRY PUREE
  13. GENTLY FOLD THE MIXTURE, USING THE CUT & FOLD METHOD
  14. ADD THIS INTO THE EGG WHITES
  15. GENTLY FOLD & MIX
  16. POUR BATTER INTO GREASED MOULDS, BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 12-15 MINS
  17. THE SOUFFLE IS READY
