Ethiopian Tomato Salad

Ingredients

  • 1 medium Yellow onion finely chopped (use white or red)
  • 2 fresh Jalapenos finely chopped (deseed if you wish to)
  • 3 tbsp extra virgin Olive oil
  • 2 tbsp white wine Vinegar
  • 1.5 tsp grated fresh Ginger
  • Salt to season
  • Black pepper to season
  • 3 large Heirloom tomatoes; roughly chopped (or any tomatoes)
  • 1 medium Yellow onion finely chopped (use white or red)
  • 2 fresh Jalapenos finely chopped (deseed if you wish to)
  • 3 tbsp extra virgin Olive oil
  • 2 tbsp white wine Vinegar
  • 1.5 tsp grated fresh Ginger
  • Salt to season
  • Black pepper to season

Steps

  1. In a bowl combine and whisk all the ingredients for dressing and set aside.
  2. In another bowl add chopped tomatoes, onions and jalapenos. Combine and pour in above made dressing. Toss and serve.
