ABOUT Mango Custard Kheer. RECIPE

A slurplicious Kheer that is made with mango-the king of fruits. I have used Kenyan mangoes as these are available here at this time of the year. Lovely colour as well as taste that tickles your tastebuds and wants you to crave for more. Sugar is also minimised due to the sweetness of mangoes used, hence all in all, a perfect dessert idea for your loved ones allowing you to keep a check on their health as well. Ingredients Serving: 6

  1. Custard powder 1/2 cup
  2. full fat milk 1 litre
  3. Mango puree 2 cups
  4. Sugar 1/4th cup
  5. Mixed nuts 1/4th cup
  6. cardamom powder 1 tsp
  7. Fresh cream 1/2 cup
  8. Pomegranate kernels 1/2 cup
  9. Mango cubes 2 cups

Instructions

  1. Boil milk on a high heat.
  2. As soon as it starts boiling, lower the heat and simmer.
  3. Mix custard powder in milk and stir until lumpfree.
  4. Add this to the simmering milk.
  5. Keep stirring until it thickens on a low to medium high heat.
  6. The raw flavour should disappear.
  7. Add mango puree and cubes both with cardamom powder and the mixed nuts too.
  8. Mix well and add sugar now.
  9. It can be adjusted accordingly as the mango puree will be sweet.
  10. Simmer until it reaches a desired consistency as that of a kheer.
  11. Finally add fresh cream to give it the finishing touches along with Pomegranate Kernels.
  12. Serve it chilled for an enhanced taste and texture.
