Ingredients to make Mango Instant Pickle ,a Summer comfy food

  • 2 Medium size Green Mango
  • Turmeric powder 1 tsp
  • Red Chili powder 2 tbsp
  • Mustard Oil 2 tbsp
  • Dry Red Chili 3
  • Asafoetida powder 1 tsp (hing)
  • Fenugreek seed powder 1/2 tsp
  • Mustard seed 1 tbsp
  • Fresh Curry leaves 1/4 cup
  • Hot water 1/2 cup
  • Sugar 1 tbsp
  • Salt per taste

How to make Mango Instant Pickle ,a Summer comfy food

  1. Cut the mango into julienne or small cubes.Mix turmeric,salt and chili powder and keep it for 30min. Add fenugreek powder,1/2 tsp asafoetida and mix once.
  2. Heat oil in a pan ,let the smoke goes out.Cool it a bit. Add dry red chilis and mustard seed and let it sputter for a sec. Add 1/2 tsp asafoetida powder and curry leaves. wait for 10 sec and add the mango mixture .
  3. Mix well and cook for 2 minute.Add hot water and cook for 5 to 7 minute.Add sugar and cook for another 2 minute.Cool it and enjoy .

My Tip:

You can refrigerate in a jar up to 5 days.
