Homemade Schezwan sauce

Ingredients to make Homemade Schezwan sauce

  • 10 dry red chillies
  • 5 garlic pods
  • Other ingredients:
  • 3 garlic pods, chopped finely
  • 1 inch piece of ginger, chopped finely
  • 1 onion, chopped finely
  • 2 red chillies, chopped finely
  • 1 tbsp Kashmiri red chilli powder
  • 1/2 tsp pepper powder
  • 1 tsp vinegar
  • Salt to taste
  • 1 tsp sugar
  • 1/2 tsp ajinomoto

How to make Homemade Schezwan sauce

  1. Boil the red chillies and garlic together for 10 minutes. Then cool and blend into a thick paste.
  2. Heat some oil. Saute the ginger, garlic and green chillies till they are soft and mushy. Now add the red chilli paste, kashmiri red chilli powder, pepper powder, vinegar, salt, sugar and ajinomoto. Cover and cook on a low heat for 5 minutes.
  3. Add the cornflour and water paste to thicken the sauce. Cook till the sauce reaches the desired consistency.
  4. Serve as desired.
