About Udupi Sambar Recipe

My kid loves Udupi style sambar hence I make this frequently at home whenever I prepare Idli Vada. Sharing the recipe. Enjoy this delicious flavour curry of Udupi

Udupi Sambar

Ingredients to make Udupi Sambar

  • 1 tsp grated jaggery
  • 2 tbsp oil
  • 2 sprig curry leaves
  • 2-3 tbsp chopped coriander leaves
  • 2 green chillies slit
  • 2 chopped tomatoes
  • 2-3 tbsp tamarind pulp
  • 1 tsp turmeric
  • 8-10 sambar onions peeled
  • salt to taste
  • For pressure cooker:
  • 1 cup Toor dal
  • 3 cups water
  • 1 tsp turmeric
  • For Sambar masala:
  • 6-8 dry red chillies
  • 1 tsp fenugreek seeds
  • 4 tbsp grated coconut
  • 5 tbsp corriander seeds
  • 1.5 tsp cumin seeds
  • 2 tbsp chana dal
  • 2 tbsp urad dal
  • 1 tbsp oil
  • Vegetables:
  • 1 carrot cubed
  • 1 potato cubed
  • 5-6 beans chopped
  • 1/2 cup cucumber cubed
  • 2-3 small brinjals chopped
  • 1/2 cup ladies finger chopped
  • 1 cup cubed pumpkin
  • For Seasoning
  • 2 tbsp ghee
  • 1 tsp mustard seeds
  • 1 tsp hing
  • 2 dry red chillies
  • 1 tsp urad dal
  • 1/2 tsp cumin seeds
  • 1 sprig curry leaves

How to make Udupi Sambar

  1. Pressure cook dal with water and turmeric until completely soft. Mash dal. Keep aside
  2. In a pan, heat oil and roast all spices and coconut as mentioned under sambar masala section until brown. Allow to cool completely. Add sufficient water and grind to form paste. Keep aside
  3. In a seperate big pan, heat 2 tbsp oil, fry onions, curry leaves,green chillies. Add tomatoes and fry. Add all veggies, turmeric and roast for 5 minutes until raw smell goes away. Add salt, water , cover and cook for 10 minutes until veggies are tender. Add the ground paste to veggies. Mix well
  4. Add tamarind pulp , dal and jaggery. Mix well. Now simmer and allow to cook for 15 minutes
  5. Now heat ghee and splutter mustard seeds. Add urad dal, jeera,hing , dry red chillies. Once urad dal browns, add curry leaves. Switch off
  6. Add seasoning to sambar. Mix well. Add corriander leaves. Serve hot with rice, dosa, idli Vada etc
