Ingredients to make Thecha

  • 25 Green chillies
  • 8 Garlic cloves
  • Chopped coriander as much you like
  • 1/4 tsp methi seeds
  • A pinch Asafoetida
  • 1/2 tsp Mustard
  • 1/4 tsp Turmeric
  • Salt and sugar/jaggery for seasoning
  • 1 tbsp oil

How to make Thecha

  1. Wash the green chillies and dry. Chop off the stems. Set aside.
  2. In a pan add in the oil. Temper with mustard, methi seeds, asafoetida and turmeric.
  3. Add the chillies and garlic. Saute till slightly softened. Keep aside to cool.
  4. Crush or Grind roughly the salt, jaggery and the cooked green chillies. Mix together with coriander.
  5. Serve with bhakri or roti.
  6. This thecha can be stored in a refridgerator, in an airtight container for a week.
My Tip: Raw tamarind (size of a lime) can also be added to thecha. If one is using tamarind, it needs crushing in a mortar and a pestle or grinding till smooth. Add it to mix when grinding roughly with other ingredients. Some people like the chillies and garlic ground raw. Some tempering on top with oil, mustard seeds and asafoetida makes a great thecha too. Adding the sweetness is optional as well.
