Inji Thokku/ Ginger Thokku

Ingredients to make Inji Thokku/ Ginger Thokku

  • Ginger -100grams
  • Red chilli (long)-5
  • Tamarind - size of a small amla
  • Jaggery powdered -1 tablespoon
  • Urad dal -2tablespoon
  • Gingelly oil -3tablespoon +1 tablespoon
  • Salt -as needed

How to make Inji Thokku/ Ginger Thokku

  1. Clean and peel the ginger. Cut into small slices.
  2. Soak tamarind in warm water set aside.
  3. In a kadai, heat 3tbsp if gingelly oil, add the urad dal. Fry till golden brown.
  4. Add the red chilli and fry for a minute.
  5. Add the sliced ginger and simmer the flame. Saute for five minutes.
  6. Switch off and cool down.
  7. In a mixie, add the tamarind, jaggery powder, the roasted items (ginger,chilli and dal) and add required salt.
  8. Add little water and grind to a smooth paste.
  9. Heat kadai with 1 tbsp oil and add the ground paste with little water and saute for two minutes till oil separates and the thooku is thick.
  10. Serve with curd rice or idli/dosa.
My Tip: The red chilli quantity is just apt since ginger will already be spicy. If using more spicy chilli like small round chilli you can reduce the quantity. Gingelly oil also help ease the spicyness and lends a nice flavour.
