About Rice Pakoda Recipe

These Rice Fritters are so easy to make, crispy from outside and soft inside. Perfect snack with a cup of coffee!! I bet nobody will be able to find out that it is made of rice. In fact I used a bowl of left over rice

Rice Pakoda

Ingredients to make Rice Pakoda

  • Cooked rice - 1 cup
  • Besan/chickpea Flour - 5 tbsp
  • green chillies - 2
  • onion - 1
  • ginger - 1 inch piece
  • coriander leaves - 2 sprigs
  • mint leaves - 15 to 20
  • salt - as needed
  • oil - ti fry

How to make Rice Pakoda

  1. Take cooked rice in a bowl. Mash it up nicely with a fork or masher.
  2. To this add besan, onion, green chillies, ginger, salt, coriander and mint leaves.
  3. Mix well so that rice and other ingredients blend together.
  4. Meanwhile heat oil in a pan. Take small bite sized pieces of the mixture and drop it in hot oil. Fry in medium hot flame until golden brown. Drain in paper towel.

My Tip:

I have used left over rice. You can use fresh rice too. Make sure the rice is cooked properly. If using rice that has been kept in the fridge, sprinkle some water and steam it in a pressure cooker for few mins without the whistle. I just microwaved it for a minute. This way it will be easy to mash the rice. U can skip green chillies and add chilli powder if u wish. But the combo of green chillies, ginger and coriander/mint leaves give a nice aroma to the Rice Pakoda.
