Kadai Handwa/ Handwa Pancakes

Ingredients to make Kadai Handwa/ Handwa Pancakes

  • Dhokla flour 2 bowl
  • curd 2 cup
  • water 1 glass
  • Crushed chilli, ginger, garlic 2-3 tbsp
  • sugar 2 tbsp
  • salt as your taste
  • Carom seeds 1/4 tsp
  • oil 2 tbs
  • Grated bottle gourd 250 gram
  • coriander leaves 1 cup chopped
  • For tadka :-
  • oil 1/2 cup + 2 tbs
  • mustard seeds 1/2 tsp + 1/4 tsp
  • cumin seeds 1/2 tsp
  • sesame seeds 2tbsp + 1/2 tsp
  • asafoetida 1/2 tsp
  • turmeric powder 1/2 tsp
  • Red chilli powder 1 tsp

How to make Kadai Handwa/ Handwa Pancakes

  1. Take a bowl add dhokla flour ,curd salt, sugar, carom seeds and 1/2 glass of water.
  2. If needed add 1/2 more water to make little thick batter.
  3. Add 2 tbsp oil then lid it and keep in warm place for 4 hours.
  4. After 4 hours batter is ready for handwa add crushed chilli, ginger, garlic then mix well.
  5. Add grated bottle gourd, red chilli powder and turmeric powder in batter.
  6. Take kadai add 1/2 cup of oil then add mustard seeds, cumin seeds and dry red chilli.
  7. Add asafoetida and sesame seeds.
  8. Pour tadka immediately into the batter and mix well.
  9. Add coriander leaves and mix well.
  10. Mix again and check the seasonings.
  11. Now again heat kadai add 1 tbs of oil for simmer.
  12. Add little mustard seeds then add sesame seeds.
  13. Pour 2 or 3 laddle of batter in kadai and lid it.
  14. Cook on semi medium flame for 7 to 8 minutes.
  15. Then flip handwa in kadai very carefully and cook from another side too.
  16. Cook it till it become crispy and brownish it take 15 to 20 minutes.
  17. Then remove from flame and serve it with ketchap, chatni or tea.

My Tip:

Make little thick batter. You can add methi leaves too. Make it in 2 batches.
