Chokha/Aloo Baingan Bharta

Ingredients to make Chokha/Aloo Baingan Bharta

  • Boiled potatoes 3 large sized
  • Brinjal 2 large sized
  • Chopped coriander 2 tbsp
  • Chopped chillies 2
  • Ginger chopped 1 inch piece
  • Garlic 7-8 cloves
  • Onion finely chopped 2 medium sized
  • Tomatoes chopped 2 medium sized
  • Mustard Oil 1 tbsp
  • Salt to taste
  • Chilli powder 2 tsp

How to make Chokha/Aloo Baingan Bharta

  1. Put some oil on the brinjals, make slits and put the garlic into the slits and smoke it on a stove top. Once its done put it into the water and peel the skin.
  2. Mash and mix the boiled potatoes and smoked brinjal.
  3. Heat oil in a pan, add the jeera, chillies, onion, ginger-garlic and cook till the onion turns translucent. Then add the tomatoes and cook for 2 mins.
  4. To this add the potato and brinjal mixture.
  5. Season with salt, red chilli powder and some mustard oil and serve it warm or at room temperature.
