Kesar Phirni

Ingredients to make Kesar Phirni

  • Full cream milk -1 liter
  • Rice - 30 gms
  • Sugar -100 gms
  • Almonds - 25-30
  • Cardamom - 6
  • Kesar ( saffron) 1/2 tsp.

How to make Kesar Phirni

  1. Put rice in a grinder and blend it in 1/2 cup of cold milk. Grind the cardamoms and keep them aside.
  2. Chop the almonds and keep them aside. Soak the kesar in some milk and leave it.
  3. Heat the milk and keep on adding the milk with rice. Do it very slowly and see that no lumps are formed. Keep on stirring it for 20-30 minutes, till the sauce gets thicker.
  4. Now add the sugar and the soaked kesar. When the sugar and kesar blend well, simmer it for 5 minutes and then switch off the gas.
  5. Check the consistency and taste the sugar. If the sauce is too thick add some milk and simmer.
  6. Pour the phirni sauce in a serving bowl and garnish it with chopped almonds and ground cardamoms.
  7. Let it cool for sometime. Keep it in the refrigerator for 1- 2 hours before serving.

My Tip:

You can serve the phirni in individual small bowls and partially cover it with silver leaf.
