Southern thai style chicken curry cooked with thai spices paste and coconut milk

Thai Yellow Curry Chicken

Ingredients to make Thai Yellow Curry Chicken

  • 300 gms chicken
  • 1/2 cup sliced onion
  • 1/2 cup chopped potatoes
  • 1/2 cup sliced carrots
  • 3 tbsp thai yellow curry paste
  • 2 cup coconut milk
  • 3 bird's eye green chilly
  • 1 kaffir lime leaf
  • 1 tbsp lemongrass slices
  • 1 tbsp brown sugar
  • Chopped coriander leaves
  • salt required
  • oil required

How to make Thai Yellow Curry Chicken

  1. Heat coconut oil. Add green chilly, lime leaf, lemongrass and onion
  2. When onion turns translucent add, carrots and potatoes. Mix and cook
  3. Then add in thai yellow curry paste. Mix till the paste coats well with veggies
  4. Now add cleaned chicken and cook for few minutes
  5. When it begins t release water, add coconut milk, mix well and cook in medium flame.
  6. Add salt, brown sugar and cook for 20 min or till the chicken is cooked well
  7. Add chopped coriander leaves, switch off flame and serve hot with jasmine rice.

My Tip:

You can also use prawns or vegetables instead of chicken.
