this is a very healthy way to make a bowl of colorful vegetables lightly cooked or sauteed , crispy tofu for added taste , some sauces added to make a flavorsome bowl of ingredients .

Ingredients to make Vegan Quinoa grain bowl

  • 1 cup quinoa cooked
  • ¼ cup cooked chickpeas or black beans
  • 1 cup firm tofu cubed
  • 1 tbsp olive oil
  • ¼ cup of sliced vegetables like yellow , green bell peppers
  • 2 tbsp carrots, thin juliennes or ribbons .
  • ¼ cup zucchini noodles ( zucchini thinly sliced into spirals .)
  • 3 tsp taco Mexican seasonings
  • 1 tbsp lime juice
  • ½ tsp white pepper .
  • . 2 tbsp salsa ,1 tsp cumin powder
  • salt as needed
  • 3 tbsp cilantro sauce or chili sauce
  • 1 tbsp honey

How to make Vegan Quinoa grain bowl

  1. keep the tofu drained of water,, pat dry with a kitchen towel. Cook quinoa with little water in a open pan or pressure cook .pressure cook chickpeas or use canned beans .
  2. In a pan add oil , heat well, , add tofu cubes, add the taco seasoning , cumin powder, salt and sautee the tofu till browned and crisp .add the chili sauce, mix well,
  3. Remove . add remainng oil , quickly stir fry all other vegetables on high heat .add cumin powder Remove the vegetables . you can mix in some salsa too .
  4. Take a wide bowl , assemble the cooked quinoa, and vegetables, with crispy tofu, and cooked beans or chickpeas . Enjoy !
