in a bowl , mix warm water and yeast , till it dissolves.
Add flour , 1/4 cup oil, and salt and make a soft dough . it will be sticky and soft for some time till you knead well .
knead dough till it appears soft sticky but getting firm . for about 4 minutes .
now take the dough to a lightly floured surface by tipping the bowl ,
and knead in 1 to 2 tablespoons more flour if needed .
Knead dough well , it will still be slightly sticky and shiny , loose , then transfer
to a lightly oiled bowl and turn dough to coat with oil.
cover the dough and let it rise. may take about 45 minutes
take out the dough after 45 minutes and press the dough into a oiled flat bread tin , flat in shape or a baking rack , well oiled , having about one inch depth , .
let the dough rise once more in this baking tin , may take about an hour .
after an hour, the dough would have risen , now make small wells with fingers on the soft dough evenly . meanwhile keep oven pre heated .
pre heat oven to 220 degrees c
mix the seasoning ingredients with olive oil and brush this over the surface of the bread, make sure the wells on the bread have oil in them too .
sprinkle sea salt , more herbs all over the dough .
bake till done .
after it is golden and aromatic, remove from the oven , allow to cool , the over turn the baking tin , .
you can also add some flavored seasoning oil now with rosemary, thyme and garlic. heat the seasonings in oil over warm heat and pour over the bread .
