A famous and traditional sweet and tangy yogurt based gravy dish from Gujarat, it is commonly known as Gujarati kadhi. It goes well with steamed rice/fulka /roti /khichdi.
Take a bowl, add the besan, curd, salt, ginger-green chili paste, sugar and water. Mix it well and make a medium thin batter.
Then heat a kadai with 1 tbsp of ghee, add the mustard seeds, cumin seeds, once it starts crackling add the dry red chillies, curry leaves, cinnamon, cloves and hing.
Once it gives a nice aroma, add the curd-besan mixture and bring it to a boil. Once it starts boiling, reduce the flame and simmer for 5 mins.
Check the seasoning and sprinkle some coriander leaves.
The Gujarati kadhi is ready to be served with steam rice/hot fulka/roti or whatever you like.
