Ingredients to make Gujarati kadhi

  • Curd - 1 cup
  • Chickpea flour/besan - 2 -2 and 1/2 tbsp
  • Sugar - 1-2 tbsp
  • Salt as required
  • Ginger -green chili paste -1/2tbsp
  • Water - 1 cup
  • For tempering:
  • Ghee -1 tbsp
  • Mustard seeds -1 tsp
  • Cumin seeds -1 tsp
  • Cinnamon- 1 stick
  • Cloves -3-4
  • Dry red chillies- 1-2
  • Curry leaves - 1 tbsp
  • Asafoetida/hing - 1/4 tsp
  • Coriander leaves - 1-2 tbsp / one handful

How to make Gujarati kadhi

  1. Take a bowl, add the besan, curd, salt, ginger-green chili paste, sugar and water. Mix it well and make a medium thin batter.
  2. Then heat a kadai with 1 tbsp of ghee, add the mustard seeds, cumin seeds, once it starts crackling add the dry red chillies, curry leaves, cinnamon, cloves and hing.
  3. Once it gives a nice aroma, add the curd-besan mixture and bring it to a boil. Once it starts boiling, reduce the flame and simmer for 5 mins.
  4. Check the seasoning and sprinkle some coriander leaves.
  5. The Gujarati kadhi is ready to be served with steam rice/hot fulka/roti or whatever you like.

fenugreek seeds n some udad dal are also added as impo ingrddiants with mustard cloves cumin seeds. taste will be better
