About Surti Sev Khamni Recipe

Sev khamni is a very famous snack from my gujarat. It is also known as a surti sev khamni and amiri sev khamni. A delicious combination of flour, buttermilk and our regular spices. Give a single try and enjoy this gujarati dish.

Surti Sev Khamni

Ingredients to make Surti Sev Khamni

  • gram flour 1 cup
  • Suji 2 tbsp
  • asafoetida 1/4 tsp
  • Citric acid 1/4 tsp
  • salt to taste
  • sugar 3 tbsp
  • oil 2 tbsp
  • buttermilk 1 &1/2 glass
  • Crushed chilli ginger garlic paste 2 tbsp
  • Eno 1 packet
  • For Tadka :-
  • oil 1 cup
  • mustard seeds 1/4 tsp
  • cumin seeds 1/4 tsp
  • asafoetida 1/2 tsp
  • Green chilli 4 chopped
  • For serving :-
  • Chopped onion 1
  • coriander leaves 2 tbsp
  • Naylon sev 1 cup
  • pomegranate pearls 1/2 cup
  • cashew chopped 2 tbsp
  • raisins 2 tbsp
  • Green chatni 1 cup

How to make Surti Sev Khamni

  1. TAKE 1 CUP GRAM FLOUR AND 2 TBSP SUJI
  2. 1/4 TSP EACH ASAFOETIDA AND CITRIC ACID, SALT TO TASTE.
  3. 3 TBSP SUGAR AND 2 TBSP GREEN CHILLI, GINGER GARLIC PASTE.
  4. 1/4 TSP TURMERIC POWDER.
  5. NOW ADD BUTTER MILK IN MIXTURE LITTLE BY LITTLE AND MIX IT WELL.
  6. KEEP READY THE MIXTURE.
  7. ADD 2 TBSP OIL AND KEEP IN WARM PLACE FOR 10 MINUTES.
  8. ADD ENO PACKET IN THE MIXTURE AND MIX WELL.
  9. POUR THE MIXTURE IN GREASED PLATE.
  10. NOW COOK IN DHOKLA COOKER OR KADAI FOR 15 TO 20 MINUTES.
  11. WHEN IT DONE REMOVE FROM GAS AND LEAVE IT FOR COMPLETELY COOL.
  12. IT WILL BE EASILY COME OUT FROM MOULD.
  13. CUT INTO PIECE.
  14. NOW TO MAKE CRUMBLE GRATE IT WITH HELP OF GRATER.
  15. FOR TADKA HEAT 1 CUP OIL IN KADAI.
  16. ADD 1/4 TSP EACH MUSTARD SEEDS AND CUMIN SEEDS.
  17. ADD 1/2 TSP ASAFOETIDA AND 4 CHOPPED GREEN CHILLI.
  18. POUR THIS TADKA OVER CRUMBLE MIXTURE.
  19. MIX IT.
  20. SPRINKLE 1 TBS CHOPPED CORIANDER LEAVES AND 1/2 CUP POMEGRANATE PEARLS AND MIX IT.
  21. SERVE IT IN A BOWL AND SPRINKLE 1 TSP POMEGRANATE PEARLS.
  22. 1 TSP CHOPPED ONION AND 2 TBSP NAYLON SEV.
  23. MIX IT AGAIN.
  24. ADD RAISINS AND CHOPPED CASHEW.
