Ingredients to make Ras malai

  • Two cups sugar
  • Four cups water
  • Two litres milk
  • few kesar strands
  • One spn corn starch
  • Dry fruits

How to make Ras malai

  1. BOIL ONE LITRE MILK FOR BASUNTHI
  2. ADD HALF CUP KESAR SOAKED IN MILK..LET IT BOIL TILL MILK THICKEN N REDUCES TO HALF...
  3. BOIL ANOTHER 1 LITRE OF MILK TO MAKE CHENNA IN ANOTHER VESSEL.ADD HALF CUP CURD SO THAT MILK CURDLES
  4. OFF THE GAS N KEEP STIRING TILL IT FORMS LUMPS...
  5. DRAIN EXCESS WATER
  6. NOW WASH THE CHENNA WITH ICE COLD WATER CRUMBLING IT PROPERLY TO REMOVE SOURNESS
  7. DRAIN ALL THE EXCESS WATER
  8. HANG THE CHENNA IN CLOTH FOR HALF AN HR..
  9. ADD ONE CUP SUGAR IN BASUNDI N KEEP STIRRING SO THAT IT DOESNT BURN AT THE BOTTOM
  10. BOIL ONE CUP SUGAR WITH FOUR CUPS OF WATER..
  11. CRUMBLE THE CHENNA WITH ONE SPOON MAIDA OR CORNFLOUR N MAKE A SOFT DOUGH BY KNEEDING IT FOR 10 MIN
  12. FORM ROUND SMALL BALLS N DROP INTO SUGAR SYRUP..
  13. LET IT BOIL FOR 15-20 MIN..SO THAT BALLS DOUBLE IN SIZE N BECOME SUPER SOFT N SPONGY
  14. LET THE BALLS REST IN SUGAR SYRUP FOR 1/2HR N THEN SQUEEZE THE BALLS LIGHTLY N TRANSFER INTO BASUNDI
