Banana walnut breakfast cake

Ingredients to make Banana walnut breakfast cake

  • 3/4 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1/4 cup almond meal
  • 1/2 cup oats
  • 3/4 cup brown sugar
  • 3/4 cup banana puree
  • 1 1/2 tsp Baking powder
  • 1/2 cup butter
  • or use 1/2 cup olive oil
  • 1/8 tsp salt
  • 1 1/4 cup whisked yogurt
  • 1 tsp baking soda
  • 1 cup cranberries,
  • 1/4 cup toasted walnuts.
  • 1/4 cup milk
  • 1 tsp vanilla

How to make Banana walnut breakfast cake

  1. Pre heat oven to 180 degrees C and lightly grease a cast iron skillet if you want to bake it a skillet itself, or use a regular cake tin if you dont have a iron skillet. )
  2. Mix flours,sugar,salt,baking powder,baking soda,almond meal and oats.
  3. Mix well butter/ oil ,yogurt, banana puree, and milk
  4. next stir in the cranberries and the walnuts. Add the wet ingredients to the dry and combine to incorporate all ingredients well.Do not over stir.
  5. Bake for 35-40 minutes until done.Check with a toothpick to see if it comes clean. Let cool completely before you slice…Enjoy!
