A very healthy cake compared to most snacks served for breakfast , has some healthy ingredients so it might be apt for a morning breakfast too ..

Ingredients Serving: 6

  1. 3/4 cup All purpose flour
  2. 3/4 cup whole wheat flour
  3. 1/4 cup almond meal
  4. 1/2 cup oats
  5. 3/4 cup brown sugar
  6. 3/4 cup Banana puree
  7. 1 1/2 tsp Baking powder
  8. 1/2 cup butter
  9. or use 1/2 cup olive oil
  10. 1/8 tsp salt
  11. 1 1/4 cup whisked yogurt
  12. 1 tsp baking soda
  13. 1 cup cranberries,
  14. 1/4 cup toasted walnuts.
  15. 1/4 cup milk
  16. 1 tsp vanilla

Instructions

  1. Pre heat oven to 180 degrees C and lightly grease a cast iron skillet if you want to bake it a skillet itself, or use a regular cake tin if you dont have a iron skillet. )
  2. Mix flours,sugar,salt,baking powder,baking soda,almond meal and oats.
  3. Mix well butter/ oil ,yogurt, banana puree, and milk
  4. next stir in the cranberries and the walnuts. Add the wet ingredients to the dry and combine to incorporate all ingredients well.Do not over stir.
  5. Bake for 35-40 minutes until done.Check with a toothpick to see if it comes clean. Let cool completely before you slice…Enjoy!
