Patra in Gujrati & Alu Wadi in Marathi

Ingredients to make Patra in Gujrati & Alu Wadi in Marathi

  • Colocassia leaves/ Arbi ke patte 10 approx
  • Filling:
  • 3 tbsp of sieved gram flour
  • 2-3 tsp of ginger garlic and chilli paste
  • 1 1/2 tbsp of curd
  • Salt
  • 1tsp Sugar
  • 2 tsp lime juice
  • Water if needed
  • For tempering:
  • 1 tsp mustard seeds
  • 1 tsp Cumin seeds
  • 2-3 slit green chillies
  • 2 tsp lime juice
  • 1 tsp Sugar
  • 1 tbsp Oil
  • Salt
  • curry leaves - 7-8
  • Sesame seeds - 1 tsp
  • Red chilli flakes (optional )

How to make Patra in Gujrati & Alu Wadi in Marathi

  1. Wash the leaves thoroughly and cut their veins from the back side.
  2. Pat them dry.
  3. In a dry bowl, mix all the ingredients for the filling and make a cake like batter. You can add water if required.
  4. In a plate or tray keep 1 leaf and spread a handful of batter all over the leaf. Take a little more if needed but spread the batter evenly.
  5. Now cover it with another leaf and repeat the process till you pile up 3-4 leaves one above the other with batter in between them.
  6. Now from the tip of the leaveas start rolling slowly till its rolled up completely and forms a log.
  7. Repeat the same process with rest of the leaves
  8. Steam these logs for 10-15 minutes or until cooked.
  9. Once cool slice each log into small pieces (just like cookies).
  10. For tempering take a wok, put oil and add mustard seeds, cumin, sesame seeds, curry leaves and chillies.
  11. Once they splutter put the sliced patra and add salt, lime juice and sugar.
  12. Mix well and cover with a lid on a slow flame. Add chilli flakes
  13. Keep for couple of minutes and we are done.
  14. Serve hot.

My Tip:

Always prefer buying medium sized leaves.
