Zucchini Muffin

Ingredients to make Zucchini Muffin

  • 1/2 cup oil (I used canola)
  • 3 eggs
  • 1 1/3 cup sugar
  • 1/2 cup orange juice
  • 1 tsp vanilla extract
  • 2 1/2 cup flour
  • 1 tsp ground cinnamon (optional)
  • 2 tsp baking soda
  • 1/2 or 1 tsp salt
  • 1/2 tsp ground cloves
  • 1 1/2 cups shredded zucchini

How to make Zucchini Muffin

  1. Pre heat the oven at 350 degree centigrade.
  2. Combine oil, sugar, egg, orange juice and vanilla extract.
  3. Sift together all the dry ingredients. Combine the dry ingredients with the wet mixture.
  4. Stir in the grated zucchini. Do not over mix.
  5. Grease and line a muffin pan. Add in 3/4 cup batter in each muffin groove.
  6. Bake until a toothpick inserted in center comes out clean this takes about 20 to 25 minutes.
  7. Let it remain in the muffin tin to cool for 10 minutes before serving.
