Ingredients to make Auria

  • Slightly sour curd 250 gms
  • 1/2 tsp Mustard seeds (rai)
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1/8 tsp
  • Fenugreek seeds 1 tsp
  • Boiled potatoes diced 2 medium sized
  • Salt 2 tsp or as per taste
  • Mustard oil 2 tsp

How to make Auria

  1. Whisk the curds, add mustard powder and whisk it well for 15 minutes (it's better with a hand whisker). Keep it aside for atleast 10 hrs.
  2. In a pan, add mustard oil to heat and add the fenugreek seeds till they turn black. Then add the diced potatoes, 1/2 tsp salt, turmeric and chilli powder. Stir it well and mix with the curd.
  3. Serve it with rajma, paranthas or puri chane.
