ABOUT Auria RECIPE

Auria a dish of curd fermented by rye. A total replica of mustard sauce in a desi way, but with a freshness quotient and no preservatives.

Ingredients Serving: 6

  1. Slightly sour curd 250 gms
  2. 1/2 tsp Mustard seeds (rai)
  3. Turmeric powder 1/2 tsp
  4. Red chilli powder 1/8 tsp
  5. Fenugreek seeds 1 tsp
  6. Boiled potatoes diced 2 medium sized
  7. Salt 2 tsp or as per taste
  8. Mustard oil 2 tsp

Instructions

  1. Whisk the curds, add mustard powder and whisk it well for 15 minutes (it's better with a hand whisker). Keep it aside for atleast 10 hrs.
  2. In a pan, add mustard oil to heat and add the fenugreek seeds till they turn black. Then add the diced potatoes, 1/2 tsp salt, turmeric and chilli powder. Stir it well and mix with the curd.
  3. Serve it with rajma, paranthas or puri chane.
