About Lau er Khosha Bhaja/Lauki Peels Sabzi Recipe

In Bengal, we have a trend to use peels of different vegetables to make a delicious dish. Earlier I had posted a recipe using potato peels, now I'm presenting a dish using bottle gourd peels. This goes very well with steamed rice.

Lau er Khosha Bhaja/Lauki Peels Sabzi

Ingredients to make Lau er Khosha Bhaja/Lauki Peels Sabzi

  • 1 bottle gourd
  • mustard oil - 1-2 tsp
  • sugar as per taste
  • Posto/khuskhus 1-2 tsp
  • salt
  • turmeric

How to make Lau er Khosha Bhaja/Lauki Peels Sabzi

  1. Peel the bottle gourd and cut it into thin fingers. Wash the peels and cut into thin slices.
  2. Heat mustard oil, once it smokes add the peels and fry for a minute.
  3. Next, add salt, turmeric, sugar. Cover and cook till the peels are soft and thoroughly cooked.
  4. Add the posto and stir fry till it coats the peels well and becomes dry.
  5. Serve it hot.

My Tip:

You have to be careful that the peels do not become mushy.
