ABOUT Mysore Masala Dosa RECIPE

Delicious crispy Masala Dosa with flavours of red chutney

Ingredients Serving: 6

  1. For Batter
  2. one and a half cup dosa rice
  3. half cup urad dal
  4. 1 tablespoon tur dal
  5. 1 tbsp chana dal
  6. 1/4 teaspoon fenugreek seeds
  7. 1/2 cup poha
  8. water as required
  9. Salt to taste
  10. 1 tsp sugar
  11. Oil/Ghee to drizzle over dosa
  12. For Stuffing
  13. 3 potatoes boiled and mashed
  14. 2 teaspoon oil
  15. one teaspoon chana dal
  16. half teaspoon urad dal
  17. one teaspoon mustard seeds
  18. 1/2 TSP cumin seeds
  19. 1 sprig curry leaves
  20. Hing a pinch
  21. 1 small onion finely chopped
  22. 1 green chillies finely chopped
  23. 1/2 TSP turmeric
  24. Salt to taste
  25. 1 inch Ginger finely chopped
  26. 2 tbsp coriander leaves finely chopped
  27. 1 tablespoon lemon juice
  28. 1 dry red chilli
  29. For Chutney
  30. 2 TSP oil
  31. 1 inch Ginger chopped
  32. 3-4 garlic cloves chopped
  33. 1 small onion chopped
  34. 3 dry red chilli
  35. 1/4 cup water
  36. Salt to taste
  37. 2 tbsp chana dal
  38. 1/4 TSP turmeric

Instructions

  1. CLEAN AND WASH RICE AND DALS
  2. SOAK RICE AND DALS WITH FENUGREEK SEEDS FOR 4-5 HOURS
  3. CLEAN AND WASH POHA. DRAIN EXCESS WATER
  4. GRIND RICE , DALS, POHA, FENUGREEK SEEDS WITH ADEQUATE WATER TO FORM SMOOTH BATTER
  5. TRANSFER TO BIG VESSEL, COVER AND FERMENT FOR 7-8 HOURS
  6. HEAT OIL, CRACKLE MUSTARD SEEDS, DRY RED CHILLI, CUMIN SEEDS, CURRY LEAVES, DALS AND HING,
  7. ADD ONION, GREEN CHILLIES AND GINGER. SAUTE UNTIL ONIONS ARE TRANSLUCENT
  8. ADD TURMERIC AND SALT. MIX WELL
  9. ADD MASHED POTATOES AND MIX WELL
  10. FINALLY ADD CORIANDER LEAVES AND LEMON JUICE. MIX WELL. STUFFING IS READY
  11. HEAT OIL, ADD CHANA DAL AND SAUTE UNTIL GOLDEN BROWN
  12. ADD ONION, DRY RED CHILLI, GINGER AND GARLIC. SAUTE UNTIL ONIONS ARE TRANSLUCENT
  13. ADD TURMERIC AND MIX WELL
  14. ALLOW TO COOL COMPLETELY
  15. GRIND WITH WATER AND SALT TO FORM SMOOTH CHUTNEY
  16. STIR FERMENTED BATTER WELL
  17. ADD SUGAR AND SALT. MIX WELL
  18. TRANSFER ADEQUATE BATTER TO SMALL BOWL. ADD REQUIRED WATER TO FORM SMOOTH POURING CONSISTENCY BATTER
  19. POUR LADDLE OF BATTER ON HOT TAWA OVER LOW HEAT AND SPREAD EVENLY
  20. DRIZZLE OIL ALL OVER , COOK OVER MEDIUM HEAT
  21. SPREAD 1 TBSP CHUTNEY ALL OVER DOSA OVER SLIGHTLY COOKED DOSA
  22. ADD PREPARED STUFFING ON DOSA
  23. FOLD IN SEMI CIRCLE OR ROLL IN CIRCULAR FASHION ONCE ITS COOKED
  24. SERVE HOT WITH CHUTNEY/SAMBAR
