Ragi Kozhukattai

Ingredients to make Ragi Kozhukattai

  • Ragi powder - 1 cup
  • Jaggery - 1/2 cup
  • Cardamom powder- ½ tablespoon
  • Salt – pinch

How to make Ragi Kozhukattai

  1. Dry roast ragi powder for 2 minutes.
  2. Boil jaggery with water until it becomes syrup. You don’t want to wait for string consistency. Once the syrup thickens, switch it off and allow it to cool.
  3. Mix salt and cardamom powder with ragi powder.
  4. Add jaggery syrup little by little to the mixture and mix well with a ladle until dough-like consistency is reached.
  5. Take lemon size dough and shape it using your hands.
  6. Steam them in a steamer for 10 minutes and serve hot with grated coconut.

My Tip:

1. Don’t skip roasting ragi powder. Unroasted ragi might smell which many don’t prefer 2. Steam them properly.
