ABOUT Bun Masala / Scrambled Egg Burger RECIPE

This is a very simple and quick snack… back in college.. this was one of the favourites.. This dish just takes me down memory lane… people sitting around on the library steps with Xeroxed notes and eating Bun Masala/ Keishto / Maggi and trying hard to study.. :) More than the study halls… the canteen was the place where people crowded.. & the 5 minute break to grab a bite would extend to at least an hour.. ;) Whenever I visit my college campus I make sure to stop by the canteen or the famous Kamath's and eat this. It still is a favourite of a lot of people I know from back in College.. You can call it the Manipal Scrambled Burger.. :)) Anybody who has Indian cooking powders can make this easily. Very similar to the scrambled eggs, but its a little on the spicier side. Do tweak it the way you want to. The recipe I have posted is for the people who like hot n spicy food.

Ingredients Serving: 3

  1. Tomato - 1 medium-sized chopped
  2. Onion - 1 medium-sized chopped finely
  3. Burger buns - 3
  4. Chilli Powder - 1 tbsp
  5. Turmeric Powder - a pinch
  6. Cumin powder - 1 tsp
  7. Milk - 1 tbsp
  8. Salt to taste
  9. Oil/butter - 1 tbsp
  10. Coriander leaves - 2-3 sprigs finely chopped

Instructions

  1. Slice the burger bun from the middle. Lightly toast it in a frying pan with some oil/butter if you want to. I like the bun as is… Make sure the heat is set to medium. Once the buns are ready, keep it aside in a plate.
  2. Beat all the 3 eggs in a bowl. Add the milk and beat again.
  3. Add oil to the frying pan. Sauté the chopped onions and when they are translucent add salt and a pinch of turmeric powder and mix well. Add the cumin and chilli, powder and mix well. If you like green chilli's you can also add some chopped, but the traditional recipe doesn't use green chilli's.
  4. Add the chopped tomatoes and mix well. Do not let the tomatoes cook, just lightly sauté them.
  5. Add the eggs and mix well. Cook the eggs till done. You can keep the eggs a little liquidy if you wish. Remove from heat.
  6. Garnishing: Garnish with finely chopped coriander leaves.
  7. Serving Suggestions: Place the scrambled egg between the burger bun and close the bun and serve hot.. Its simple that simple and yummy.. :)). Just another way to eat your bread & scrambled eggs the Indian way :).
