Eggless Lemon Coconut Loaf with Lemon Glaze

Ingredients to make Eggless Lemon Coconut Loaf with Lemon Glaze

  • For Cake:
  • All purpose flour 1.5 cups
  • Baking powder 2 tsp
  • Baking Soda 1 Tsp
  • Sugar 3/4 cup
  • Dessicated coconut 6 Tbsp
  • Curd 1 cup
  • Flavourless oil 1/2 cup
  • Freshly squeezed lemon juice 3 tbsp
  • Lemon zest (optional)
  • For Glaze:
  • Icing sugar 1/2 cup
  • 2 tsp Lemon juice

How to make Eggless Lemon Coconut Loaf with Lemon Glaze

  1. Preheat oven to 170C for a 8-10 minutes.
  2. Grease a loaf pan and keep aside.
  3. Beat oil and sugar together till sugar is dissolved.
  4. Add the curd and mix well.
  5. Add the lemon juice and zest, mix until incorporated.
  6. Add sifted flour, baking powder and baking soda. Mix just until incorporated, do not over mix.
  7. Pour batter in the tin and bake for 25-30 minutes.
  8. A toothpick inserted in middle of cake should come out clean.
  9. Take out pan and allow to cool.
  10. For the icing, mix sugar and lemon juice until you get a thick, just runny glaze. Adjust sugar or juice as needed.
  11. Pour the glaze on top of the cooled loaf and your cake is ready !

Desiccated coconut means grated coconut. you can also get Coconut powder from grocery store n use
