Spinach and corn quiche

Ingredients to make Spinach and corn quiche

  • Wheat flour. 1 cup
  • Refined flour. 1cup
  • Butter. 120 gms
  • Salt n sugar. 1tsp each
  • Cold water. 4-5 tbsp
  • For the filling- Spinach. 1 big bunch
  • Corn. 1 packet
  • Onions. 2
  • Milk. 3/4 cup
  • Paneer. 200 gms
  • Cheese. 200 gms
  • Chillie flakes and salt

How to make Spinach and corn quiche

  1. 1. Mix both the flours and cold butter. Add salt and sugar.
  2. 2. Crumble the butter with your hands and start making a dough adding little cold water.
  3. 3. Refrigerate the dough for half an hour. Meanwhile prepare the filling
  4. 4. Put 1 tsp butter in a pan.
  5. 5. Add chopped onions n sauté till it becomes transparent.
  6. 6. Now add chopped spinach and corn to it.
  7. 7. Add salt. Sauté it till the spinach has released all it's water n the corn has become little soft.
  8. 8. Take out dough from the refrigerator and divide the dough in equal parts depending upon the size of your moulds.
  9. 9. Dust the surface and roll the dough into thin disc.
  10. 10. Transfer this onto the pie moulds. Remove the extra dough from the moulds n press it firmly with your fingers.
  11. 11. Prick it with fork so that the dough does not rise when baked
  12. 12. Transfer the moulds to preheated oven at 220 degrees for 20- 25 mins. ( depending upon your oven).
  13. 13. Meanwhile, mix milk and paneer and give it a fast grind. Add chillie flakes to it.
  14. Assembling the quiche On the baked pie, put some shredded cheese. Next put spinach n corn mixture. Then put milk and paneer mix. In the end cover it with some more shredded cheese and sprinkle some chillie flakes on top. Bake it for 20 mins.

My Tip:

With 2 cups of flour I could make 4 pies. The size of mould is 6". You can divide the spinach mixture also in equal parts beforehand.
