Eggless Alphonso Choco Cake.

You don't need to do much for the king of fruit cake. Let the mango do the talking.

Ingredients Serving: 6

  1. Maida 1 1/4 cup
  2. Baking Powder 1 Tsp
  3. Baking soda 1/2 tsp
  4. Powdered sugar 2 tbsp
  5. Butter 100 gms
  6. Condensed milk 200 ml
  7. Vanilla essence 1 tsp
  8. Milk 100 ml
  9. Lemon 1/2
  10. Whipping cream 1 cup
  11. Dark chocolate 1 cup
  12. Alphonso Mango 2
  13. neutral gel 1 tbsp
  14. Water 1 cup
  15. Sugar 1 tsp
  16. Mango essence 1 tsp

Instructions

  1. Sieve maida, baking powder, baking soda in a bowl.
  2. Beat powdered sugar, butter, condensed milk until it becomes light and fluffy.
  3. Add vanilla essence, lemon, and all the dry ingredients with wet ingredients.
  4. Fold all ingredients and add milk accordingly to get a ribbon consistency.
  5. Grease the cake pot with butter and place a parchment paper.
  6. Preheat the oven at 180*C.
  7. Transfer the batter into cake pot and bake at 180*C for 25-30 minutes.
  8. Let the cake cool.
  9. Divide into 2 layers.
  10. Bring water to boil. Add sugar. Stir until dissolve. Let it cool and add mango essence.
  11. Soak each cake layer with sugar syrup.
  12. Beat whipping cream until stiff peaks come and coat the bottom layer thick. Then add finely chopped alphonso mango mix with neutral gel within the periphery of icing.
  13. Position the top layer on bottom layer.
  14. Cover cake with whipped cream completely. Set in fridge for 10 minutes.
  15. Microwave dark chocolate for 30 seconds. Stir well and again microwave it for 20 seconds.
  16. Pour it on the half portion of cake.
  17. Slice out the mangoes into very thin slices and place it on the rest half portion of cake.
  18. Place all the rest slices diagnolly and slowly fold it inwards to make a flower out of it. And place it on the top of the cake.
  19. And here you are ready with the king of fruit cake.
