Baked Mango Yogurt with Chilli-Mango Granita

ABOUT Baked Mango Yogurt with Chilli-Mango Granita RECIPE

The king of fruits shines in this luscious dessert. The creamy richness of the baked yogurt is offset by the icy tartness of the granita and the gentle heat from the chilli.

Ingredients Serving: 6

  1. For the Baked Mango Yogurt :
  2. 250 ml Yogurt
  3. 200 ml cream
  4. 200 ml Condensed Milk
  5. 200 ml Mango puree (passed though a fine sieve)
  6. For the Chilli Mango Granita :
  7. 400 ml mango Juice
  8. 1/2 tsp red chilli powder (can be adjusted according to taste)
  9. Pinch of black pepper powder

Instructions

  1. For the Baked Mango Yogurt:
  2. Preheat your oven to 180C. Mix together all the ingredients until evenly combined and pass the mixture through a fine sieve.
  3. Pour the mixture into ramekins, or any bake-and-serve dish and place them into a baking tray. Gently pour hot water into the tray so the ramekins are submerged about halfway in the water.
  4. Take care to not let any water fall into the ramekin.
  5. Place the tray in the preheated oven and bake for about 30 min or until the yogurt has set (the sides must appear set and there should be a slight wobble in the centre when you gently shake the ramekin)
  6. Allow to cool to room temperature and then place into the fridge to chill. Serve chilled.
  7. To brulee the top (optional) Evenly sprinkle one teaspoon of caster sugar over the top of the chilled yogurt. Gently caramelize the top using a blow torch or by placing under a grill.
  8. For the Chilli-Mango Granita
  9. Mix together all the ingredients and pour into a shallow tray. Place the tray in the freezer.
  10. As the the mixture begins freeze, gently agitate the mix using a fork. Scrape the frozen portions and mix them with the liquid. Don't allow the frozen parts to melt completely.
  11. Place the tray back in the freezer. Keep agitating, scraping and mixing every 30-60 minutes until you're left with a powdery, icy mix.
  12. Serve in chilled bowls and place any extra granita back into the freezer. You can make these as two individual desserts or combine them. Either way, they'll be gone within minutes! Enjoy!
