About Medhu Vadai Recipe

Vadai is a famous snack in all over South India. Best side dish for Vadai is sambar/Chutney. It is served with the main course such as Dosa, Idli, or Pongal. Medhu Vada/Ulundhu Vadai is a savoury snack from southern part of India.My mil is a great expert in making Ulundhu Vadai. She prepares generally this vadai whenever guest arrives. Her vadai will be very fluffy and soft. We get soft vadais while grinding batter in grinder rather than grinding in mixie. But for lesser quantity preparation we can use mixie.

Medhu Vadai

Ingredients to make Medhu Vadai

  • Urad Dhal - 200gm
  • green chillies -3
  • ginger - a small piece
  • curry leaves/coriander leaves - few (finely chopped)
  • salt to taste
  • oil for deep fry

How to make Medhu Vadai

  1. Wash and soak the Urad dhal for 1 to 2 hours. Drain the water and keep it aside.
  2. In grinder add the soaked dal along with green chillies and ginger.
  3. Grind it in to a smooth batter by sprinkling water. Do not pour water as vadai will drink more oil. The batter should be thick. It should not be watery.
  4. Once done take the batter from the grinder.
  5. Now add chopped curry leaves, coriander leaves and salt.
  6. Mix well the batter with hands. Keep water in a bowl and wet your hands.
  7. Take a zip lock cover or banana leaf , grease with little oil.
  8. Take small quantity of batter and place it in a cover. Make a hole in centre.
  9. Heat a pan with enough oil and slowly drop the vadai and deep fry.
  10. Fry the vadai in medium flame,until we get golden brown colour.
  11. Once done take it out and drain it in a tissue paper.
  12. Enjoy the taste of crispy and soft vadai.
