Blueberry- Lemon Muffins

Ingredients to make Blueberry- Lemon Muffins

  • Flour - 250gm
  • caster Sugar - 100gm
  • Butter - 120 gm
  • Eggs - 2 large
  • Baking powder - 11/2 teaspoon
  • Blueberries - 150gm / A handful
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Lemon Crunch:
  • Lemon zest - 1 teaspoon
  • Granulated Sugar - 50gm

How to make Blueberry- Lemon Muffins

  1. Preheat the oven to 180 degrees celsius. Line the muffin tin with liners.
  2. In a large bowl, cream the butter and caster sugar until pale and fluffy. Add and beat one egg at a time.
  3. Add the buttermilk, lemon juice and lemon zest.
  4. Sift in the flour and baking powder. Mix thoroughly. Fold in the blueberries.
  5. Scoop 2 ice cream scoops of batter in the liners.
  6. Mix the granulated sugar and lemon zest, sprinkle this mixture on the batter.
  7. Bake for about 30 minutes. Check to see if completely baked from about 25 minutes.

My Tip:

Once baked, serve warm with some fresh cream or butter and jam or even some cheese
