Lemon Chicken

Ingredients to make Lemon Chicken

  • 4 Chicken breasts
  • 1/3 cup Chicken broth
  • 4 tbsp Butter
  • 2 tbsp Olive/vegetable oil
  • 2 tbsp Lemon juice
  • 2 Lemons sliced
  • 2 tbsp Parsley leaves chopped
  • salt and pepper to taste
  • 2 lemon wedges for garnishing

How to make Lemon Chicken

  1. Place the chicken breasts between 2 plastic wrap sheets and flatten it using a rolling pin to 2 inch thickness.
  2. Rub the chicken breasts with salt and pepper. Roll them in flour and cook the chicken breasts in a flat pan with half vegetable oil and half butter, until its golden brown from both sides.
  3. For sauce, boil chicken broth in a shallow pan. Add butter, lemon juice and lemon slices. Cook the sauce until it thickens.
  4. On a serving plate, place the cooked chicken breasts. Pour over the sauce. Garnish with parsley/coriander.
  5. Serve hot with lemon wedges on the side.
