Ingredients to make SEERAGA SAMBA VEGETABLE BIRYANI

  • Seeraga samba rice -1 cup
  • Mixed vegetables -(carrot,beans,peas,cauliflower,potatoes) - 1 cup
  • Onions-2 nos chopped
  • Tomatoes - 2 nos chopped
  • Ginger garlic paste- 1 teaspoons
  • Red chilly powder -1 teaspoons
  • Dhaniya powder-2 teaspoons
  • Turmeric Powder -1/2 teaspoon
  • Garam Masala powder - 1 teaspoon
  • Curd -1/2 cup
  • Cinnamon,cloves,cardamon,bay leaves a few
  • Mint leaves-few
  • Salt
  • Ghee+oil-2 tablespoons

How to make SEERAGA SAMBA VEGETABLE BIRYANI

  1. First in a vessel add cinnamon cloves, cardamom,bay leaves,tomatoes,ginger garlic paste,redchilly powder,dhaniya powder,turmeric powder,garam masala powder , mint leaves and curd mix everything together and set aside for 10 mins . Cook the seeraga samba rice with 1 1/2 cups of water and 1 tsp of ghee in a pressure cooker for 2 whistles.set aside.
  2. Cook the vegetables in pressure cooker for 2 whistles drain the excess water and set aside.
  3. Heat ghee+oil in kedai add the onions and saute for few mins. Next pour the curd mixture to it and cook until raw smell goes.
  4. Add the cooked vegetables, salt mix well and cook till the gravy thickens.
  5. Add the cooked rice mix everything together. check for salt.
  6. Garnish and serve hot with raitha and chips.

My Tip:

You can use basmati rice also. Use the drained vegetable water as clear soup or in rasam.

can we use normal basmati or kaima rice instead of seeraga samba rice as we don't get this variety of rice here :)
