Potatoes with cashewnuts

Ingredients to make Potatoes with cashewnuts

  • 4-5 boiled potatoes, diced
  • 1 chopped onion
  • 1chopped tomato
  • 1/4 cup Curd
  • 1tsp ginger, garlic and green chili paste
  • 1 bay leaf
  • 2-3 pinches of asafoetida
  • 1/2tsp Cumin seeds
  • 1/4 cup roughly crushed cashew nuts
  • 1tsp Cumin Powder
  • 1/4tsp Turmeric powder
  • 1/2tsp red chilli powder
  • 2-3tsp butter
  • 2tsp oil
  • chopped coriander leaves for garnishing
  • Salt

How to make Potatoes with cashewnuts

  1. Heat a kadai, add butter and oil.
  2. Add cumin seeds, add bay leaves and asafoetida and fry until fragrant.
  3. Add chopped onion, ginger,garlic and green chilli paste and fry until fragrant.
  4. Add the cashew nuts and fry for 2-3mins or until the cashews starts changing the colour to light brown.
  5. Add the dry masala powders and fry until fragrant.
  6. Add the chopped tomato and cook until soft.
  7. Now slightly dilute the curd with little water and add to the kadai, and cook until oil separates.
  8. Add the diced potatoes and fry for 2-3mins, later cover with a lid and cook for 4-5mins.
  9. Garnish with chopped coriander leaves.
