Ingredients to make Badshahi Murgh Lollipop with Mango reduction

  • 15 pieces chicken lollipops
  • Salt to taste
  • 100 gm hung curd
  • 2 tbsp fresh cream
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tbsp green chilli paste
  • Nutmeg powder 1 tsp
  • 1 tsp Elaichi Powder
  • 1 tsp Kewra Water
  • 2 tbsp roasted gram flour
  • 1 egg white
  • 1 tsp rose water
  • Oil for brushing
  • Coriander chopped
  • 1 tsp garam masala powder
  • 1 tbsp ginger garlic paste
  • For Mango reduction- 2 tbsp mayo
  • Cream Cheese 1 tbsp
  • Chopped Garlic 1 tbsp
  • Green chilli 1, chopped
  • 3 tbsp ripe mango puree
  • Salt to taste
  • 1 tbsp oil

How to make Badshahi Murgh Lollipop with Mango reduction

  1. For mango reduction- Heat oil in a nonstick sauce pan, add puree of mangoes, cook for 2 minutes.add garlic cloves & chilli,salt.
  2. Cook it for 5 mins.Then cool down the sauce & mix this sauce with cream cheese & mayo.Your mango reduction is ready.
  3. For Lollipop - First marinate the lollipops with hung curd, salt, ginger garlic paste, chilli paste and keep it aside for minimum 2 hours.
  4. Marinate the lollipops with rest of ingredients except oil and chopped coriander. Keep it in freezer for at least 1 hour.
  5. Grill it in preheated oven for 30-40 mins. Brush oil 2-3 times meanwhile.
  6. Serve hot with garnishing by chopped coriander and mango flavoured reduction.
