The sauce consists soya granules cooked with onions and tomatoes to give a luscious thick sauce. Vegetables such as capsicums, carrots ans peas canbe added to further enhance the nutritive value.

Ingredients Serving: 4

  1. FOR SOYA GRANULES SAUCE:
  2. 1/2 cup soya granules
  3. 1 Large Onion finely chopped
  4. 1 medium tomato finely chopped
  5. 1 green chilli finely chopped
  6. 1 tablespoon ginger garlic paste
  7. 1 teaspoon salt
  8. 1/4 teaspoon turmeric powder
  9. 1 teaspoon coriander powder
  10. 1/4 teaspoon red chilli powder
  11. 1/4 teaspoon garam masala powder
  12. 1 cup water or as required
  13. 1/4 cup oil for cooking
  14. FOR PASTA::
  15. 1/2 cup Fusilli (spiral) pasta boiled in salt water
  16. 2 teaspoon olive oil
  17. 1 teaspoon garlic finely chopped
  18. 1/8 cup carrot juliennes
  19. 1/8 cup capsicum juliennes asstd colours
  20. 1/4 teaspoon oregano powder
  21. 1/4 teaspoon Italian herbs mix

Instructions

  1. FOR SOYA GRANULES SAUCE:
  2. Immerse soya granules in hot water for 10 minutes. Drain and squeeze out water and keep aside.
  3. Heat oil in a pan or pressure cooker and saute chopped onions till light brown.
  4. Add ginger garlic paste and chillies. Saute for minute
  5. Now add the soya granules and saute for a minute.
  6. Then tip in the salt, turmeric powder, coriander powder and chilli powder and saute for 5 minutes. Then add the chopped tomatoes.
  7. Add water and finally sprinkle garam masala powder.
  8. Cover pan and cook for 20 minutes in a pan or pressure cook till 3 whistles.
  9. FOR PASTA:
  10. Heat olive oil and lightly saute finely chopped garlic.
  11. Add the capsicum and carrot juliennes , oregano powdee and Italian herbs mix
  12. Finally add the pasta and toss gently.
  13. HOW TO PROCEED:
  14. Spoon out a generous quantity of soya granules sauce over a bed of pasta
  15. Garnish with some spring onions
  16. Enjoy it warm
