Spinach Cheesy Muffin Bread

Ingredients to make Spinach Cheesy Muffin Bread

  • All purpose flour 1 cup
  • Spinach 50 gms, blended with 1/4 cup water
  • Yeast 1 teaspoon
  • Milk - 1/2 cup (half for the kneading and half for brushing the muffins)
  • Oil 1 tablespoon
  • Salt 1/2 teaspoon
  • Sugar 1 teaspoon
  • Mozzarella Cheese cubes to fill in the muffins 6 (little less than an inch sized)

How to make Spinach Cheesy Muffin Bread

  1. Mix all the ingredients together and knead it for 15 mins until it comes together and forms a ball.
  2. Set it aside for 45-50 minutes covered with a damp cloth for first rise or until it doubles in volume.
  3. Once risen, punch it down to help air escape. On a lightly floured surface, knead it for a few minutes.
  4. Make small balls and place in muffins molds adding an inch size mozzarella cheese cube in the center.
  5. Brush it lightly with milk and let it proof. Keep a check when on second proof, this process is pretty faster.
  6. Make sure it doesn't over proof.
  7. Once doubled, bake them in preheated oven at 200* for 25 minutes.
  8. Keep an eye while these are being baked. Once the top is lightly browned, remove from the oven.
  9. Serve them hot to enjoy the cheese oozing out. Bite into the fresh n hot spinach cheesy muffins bread.
  10. P.S. The preparation time is approximately 15-20 minutes, rest of the time goes idle during the dough proofing.

My Tip:

Try variations in flavor with beetroot/coriander or even fresh fruit puree.
