Ingredients to make Thoomwarododo (Sindhi green garlic Jawari paratha)

  • Jawar flour- 1/2 kg
  • Green Garlic - finely chopped- 1/2 cup
  • Onion- One large - Finely chopped
  • Tomato-One large -Finely chopped
  • Green chillies - 4-5 finely chopped
  • Coriander leaves - 1/4 cup
  • Ajwain - Carrom seeds - 1/2 tsp
  • Red chilli powder- 1tsp
  • Salt - according to taste
  • Oil - to go into the dough - 2 tbsp
  • Water for kneading the dough.

How to make Thoomwarododo (Sindhi green garlic Jawari paratha)

  1. Take a container add the Jawar flour .
  2. Add 1/2 cup of chopped green garlic along with the white part.
  3. Add chopped onion, tomato, chopped green chillies. coriander leaves, salt, red chilli powder and ajwain.
  4. Add oil for Moyen...Mix the flour with fingertips to form crumbs.
  5. Mix all the ingredients .Slowly keep adding water.
  6. knead into a soft dough.
  7. Take a big ball...Flatten on palm..This dodo is made with palm without using rolling pin.
  8. Heat griddle with few drops of ghee and put the ball on it.
  9. Now wet your hands and keep flattening dodo with palm till it form into a thick roti.
  10. Leave it to cook on low flame by adding ghee.It take App 3-4 mins to cook on one side..
  11. Flip it on the other side , Apply ghee and cook both the sides till golden brown.
  12. Aroma of garlic must have invited your family to be around u :-)
  13. Serve hot with a dollop of home made butter on top with curds and papad for breakfast and teevan ( Mutton) for lunch or dinner.
  14. Enjoy this traditional ,healthy and unique dish..

My Tip:

Do not turn the dodo very often...It may break..Handle it carefully by flipping it only once.
