About Payasam Recipe

A sweet dish made from rice, suagr and milk enjoyed in South India.

Payasam

Ingredients to make Payasam

  • 1/2 cup Unakkalari (Kerala Raw rice)
  • 4 cups Full cream milk
  • 1/2 cup water
  • 3/4 cup sugar
  • A pinch of cardamom powder

How to make Payasam

  1. Place raw rice (washed and rinsed) along with 2 cups of milk and the water in a pressure cooker
  2. Mix sugar in it and cook over medium flame.
  3. Put the pressure cooker lid on when the steam starts coming out and cook for 1 whistle
  4. After the pressure has released, open the lid and add cardamom powder.
  5. Add the remaining 2 cups of milk , simmer in low flame and cook for 18-20 mins till it thickens and the payasam has a light pinkish colour
  6. Garnish with almonds and serve hot or cold.
